JAMA:美国饮食碳水化合物、蛋白质以及脂肪摄入变化研究

研究发现,1999-2016年间,美国成人的饮食质量提高,来自高质量碳水化合物、植物蛋白质和多不饱和脂肪的能量摄入百分比显著增加

近日研究人员就美国成年人膳食营养素摄入量、食物来源和饮食质量的变化趋势进行了考察。

1999-2016年间,20岁以上成年人参与本次研究,考察营养素及其亚型、食物来源,通过2015年健康饮食指数对食物质量进行评估(范围:0-100;分数越高,表明饮食质量越好)。

43 996名参与者,平均年龄为46.9岁,女性为51.9%。从1999年到2016年,总碳水化合物来源的能量从52.5%下降到50.5%(差异,?2.02%),而总蛋白来源能量从15.5%增加到16.4%(差异0.82%),总脂肪来源的能量从32.0%增加到33.2%(差异 1.20%)。低质量碳水化合物能量由45.1%下降到41.8%,下降了3.25%,高质量碳水化合物能量从7.42%增加到8.65%,植物蛋白质(从5.38%增加到5.76%,增加了0.38%),饱和脂肪酸(从11.5%增加到11.9%,增加了0.36%),多不饱和脂肪酸(从7.58%增加到8.23%,增加了0.65%)来源能量均增加。2015年总体健康饮食指数从55.7上升到57.7(差异2.01)。高品质碳水化合物能量增加和低品质碳水化合物能量减少,主要是由于全谷类摄入增加,以及糖摄入减少导致的。植物蛋白质的变化主要是由于全谷物(0.12%)和坚果(0.09%)摄入量增加导致的。
