白内障是发达国家中最常见的失明原因之一，它与衰老密切相关。白内障形成的确切机制尚不清楚，但越来越多的证据表明，炎症和氧化过程有潜在的作用。因此，饮食中抗氧化和抗炎的因素，如维生素K1，可能起到保护作用。

来自西班牙圣胡安德鲁斯大学医院的María L. Camacho-Barcia及其同事在2003-2011年间通过随机临床试验，研究了5860名参与者(平均年龄，66.3年)的膳食维生素K1摄入量与发生白内障的风险之间的关系。使用有效的食物频率问卷来评估膳食维生素K1摄入量。

研究人员发现，在经过5.6年的随访中，新出现了768例白内障。在对潜在的混杂因素进行调整后，在最高的膳食维生素K1摄入量中，白内障的风险较最低膳食维生素K1摄入量的风险低(危险比0.71)。

作者写道："即使是在其他潜在的混淆者调整后，高摄入量的膳食维生素K1也能降低老年地中海地区的白内障风险。"

几位作者公布了与营养行业的财务联系；这项研究中使用的补充食品是由康纳利·奥列瓦罗(Comunal Olivarero)和霍吉布兰卡(Hojiblanca)、加州核桃委员会(California Walnut Commission)和La Morella坚果(La Morella Nuts)捐赠的。
