少数研究显示，膳食蛋白质对龋病过程中的脱矿有潜在的抑制作用。这篇研究的目的是通过体外研究的方法探究卵清蛋白的抗龋活性。变异链球菌UA159的生物膜在唾液附着的牛釉质和牙本质片上形成。对生物膜施以10%蔗糖刺激，随后在整个实验过程中施加200 μg/mL卵清蛋白溶液或1：10， 1：100和1：1000 (v/v)的卵清蛋白溶液序列稀释液。将生物膜暴露于10%蔗糖后施以0.9% NaCl作为龋坏阳性对照。一旦实验完成，分析生物膜的菌体量、活性菌和多糖的形成。通过计算%SH缺失情况(demineralization)获取最终的表面硬度(SH)。2个实验分别完成，各重复3次。数据使用ANOVA和post hoc检验进行统计学评估，置信水平设置为95%。结果显示，在2个牙齿底物中均可观察到菌体量和胞外多糖形成的减少(p<0.05)，而非活性菌的数量。与阳性对照相比，所测试浓度的卵清蛋白以浓度依赖的模式减少脱矿(p<0.05)。最高浓度在釉质和牙本质上的%SH缺失情况降低了30%。结论：对添加蔗糖刺激的变异链球菌生物膜施以卵蛋白看起来可以减少生物膜致龋模型的生龋性。临床意义：卵蛋白可
