近日,来自一项由美国伊利诺斯大学香槟分校、英国伯明翰大学等研究人员联合进行的研究表明,多吃含有黄烷醇的食物可以提高人的思维敏捷性。

相关论文以:Dietary flavanols improve cerebral cortical oxygenation and cognition in healthy adults 为题,发表在Nature旗下期刊 Scientific Reports 上。

研究人员发现,健康的成年人在饮用富含黄烷醇的可可饮料后,能更有效地完成某些认知任务,在复杂的项目测试中表现得更好。而且,在事先摄入可可黄烷醇的情况下,人类大脑在遇到轻微的血管损伤时,会恢复得更快。

提升三倍以上

黄烷醇是植物类黄酮的一个子类,是一种天然植物化合物,存在于可可、水果、蔬菜、茶等许多食品中,而可可中的黄烷醇含量最高。此前的研究表明,多吃富含黄烷醇的食物有益于人体的血管。

在此次工作中,研究人员首次发现了黄烷醇对健康成年人的大脑血管和认知能力有着积极的影响。

对此,论文作者之一、伯明翰大学营养科学讲师 Catarina Rendeiro 表示:“虽然我们在实验中使用了可可,但黄烷醇在各种水果和蔬菜中极为常见。通过更好地了解食用这些食物组产生的认知好处,以及更广泛的心血管益处,我们可以为人们提供更好的指导,让他们更好地选择自己的饮食。”

该研究招募了 18 名年龄在 18-45 岁的健康男性志愿者,他们血压正常、没有心脑血管及呼吸系统疾病史。

研究人员分别对志愿者进行了两个单独的试验,分别让他们服用黄烷醇含量较高的可可饮料和黄烷醇含量较低的可可饮料,同时采用双盲研究设计法,避免研究人员和志愿者的主观感受对实验结果产生影响。

在饮用可可饮料后约两个小时,实验志愿者均接受了一种挑战大脑的血液循环的标准方法,让他们呼吸二氧化碳浓度大约是空气中正常浓度 100 倍的空气,以此产生一种称为高碳酸血症的效应。然后,通过对试验人员进行非侵入式结构核磁共振脑扫描,分析她们的 MRI 影像数据,分析他们大脑中的血氧水平。

“身体的典型反应是会增加流向大脑的血液,因为这样可以为大脑提高供氧水平,也会使大脑排出更多的二氧化碳。” 论文作者之一、伊利诺伊大学香槟分校心理学教授 Gabriele Gratton 说。

研究人员通过一种利用光来捕捉大脑血流变化的技术——功能性近红外光谱技术(functional near-infrared spectroscopy),测量了试验人员大脑额叶皮层的氧含量,这个区域在大脑作出规划、调节行为和决策中均起到关键作用。

他们发现,大多数志愿者在摄入可可黄烷醇后,与正常情况或饮用不含黄烷醇的可可相比,大脑氧合反应表现得更强、更快。Rendeiro 说:“在饮用高黄烷醇可可后,试验者的最大氧合水平比饮用低黄烷醇可可后的水平要高三倍以上,氧合反应快一分钟左右。”

越难越明显

在实验中,研究人员还为试验志愿者设计了复杂的任务挑战,让他们管理有时相互矛盾或竞争的需求。

在饮用黄烷醇饮料 2 小时后,实验人员在改良的 Stroop Task 中的认知表现(反效率分数(IES)是指 “反应时间/准确性(以秒为单位)”,图中是试验人员在四种不同的情况下的认知表现,他们表现出了逐步增加的认知需求。)

摄入可可黄烷醇后,志愿者还执行了更具挑战性的认知测试,结果表明,高黄烷醇可可的摄入会让试验者正确解决问题的速度比平时快 11%。相反,在更容易的任务上,他们却没有表现出明显的差异。

对此,Rendeiro 解释道:“我们的研究结果表明,参加者服用富含黄烷醇的饮料具有明显的益处,但前提是任务变得非常复杂。我们可以将这一特性与改善血液氧合的结果联系起来,如果你面临更多的挑战,那么大脑需要改善血氧水平来应对这一挑战。这也进一步表明,黄烷醇在对认知有要求的任务中可能特别有益。”

但是,他们也发现,志愿者对可可黄烷醇的反应各不相同。“虽然大多数人在摄入黄烷醇后,表现出了受益的表现,但有一小部分人却没有。”在 18 名研究对象中,有 4 名在摄入黄烷醇后,脑氧合反应没有任何差异,他们在测试中的表现也没有改善。

Rendeiro 说:“因为这 4 名志愿者在平时已经拥有最高的氧合反应,这可能表明对于那些已经相当健康的人,黄烷醇的摄入几乎对他们的认知没有多大影响。总的来说,研究结果表明,黄烷醇的摄入与血管活动的改善与认知功能的改善有关。”
