科学家向理解不同饮食习惯和肠道健康间的联系迈进了一步。新研究揭示了饮食如何影响微生物的首个一般原则。澳大利亚悉尼大学研究人员发现，肠道中的氮有助于调节肠道菌群及其宿主的相互作用。相关报告近日刊登于《细胞—新陈代谢》期刊。

“有很多饮食策略都称对肠道健康有益，但迄今为止，人们很难创建各种饮食策略及其对宿主微生物组影响间清晰的因果关系。原因是很多复杂因素在起作用，例如食物构成、饮食方式和基因背景等。”该研究第一作者Andrew Holmes说。

众所周知，肠道菌群在免疫调节和消化等方面有重要作用。之前有研究证实，饮食如何影响微生物组的数种模型，但这些无法解释微生物对饮食策略的应答。新研究分析了25种包含不同水平蛋白质、碳水化合物和脂肪的饮食策略，对858只小鼠的影响。尽管肠道细菌存在巨大的多样性，但该研究只出现了两种主要的响应模型：微生物丰度的增加或减少取决于蛋白质和碳水化合物的摄入量。

“肠道细菌对摄入食物的最主要营养需求是碳和氮。碳水化合物不包含氮但蛋白质包含，饮食中蛋白质和碳水化合物的比例，会对肠道菌群产生巨大影响。”Holmes说。

另外，该新模型还表明，高碳水化合物饮食最可能会支持微生物组间的良性互动，而这些益处也与宿主动物的蛋白质摄入有关。研究人员希望，新发现能为开发检验数百种不同饮食策略影响的更精确计算机模型奠定基础，并更好地预测有益于肠道健康的饮食组合。

下一步，研究人员计划找出哪种饮食组合能促进最优肠道菌群的产生。他们还将开发新模型，模拟该过程在实际中是如何操作的。
