因为该研究发现,饥饿激素(即ghrelin)水平在晚上上升,饱腹激素(即激素肽YY,一种食欲抑制激素)水平在晚上下降。

研究结果还表明,压力可能会在晚上增加更多的饥饿激素水平,而对于那些容易暴饮暴食的人来说,激素对食欲的影响可能更大。

在这项研究中,研究小组招募了32名超重者(19名男性和13名女性),年龄在18至50岁之间。其中一半以前被诊断为暴饮暴食症。参与者的体重指数(BMI)在28~52 kg/m2,其他方面都很健康。

研究方案要求每个人在8小时内保持饥饿,然后在上午9点或下午4点接受含608卡路里的流食,在餐后约130分钟的每个受试者接受标准的实验压力测试,其中一台数码相机记录了他们的面部表情,同时而他们的不用的那只手则浸入一桶冷水持续两分钟。

研究人员从每个参与者身上抽取血液来测量压力和饥饿激素。受试者还被要求用数字量表评价他们的主观饥饿程度和饱腹程度。

在压力测试开始30分钟后,受试者们可以吃一个自助餐,由三个中等大小的比萨饼、零食、饼干、巧克力糖果和水组成。

研究小组发现,一天中不同时间段的饥饿程度显著不同,与早晨相比,晚上的自我报告食欲更大。

研究小组还发现,与当天晚些时候的流食相比,与食欲、葡萄糖和胰岛素水平降低相关的饱腹激素水平相对降低。

而且,只有那些暴饮暴食症患者在晚上总体饱腹感较低。与那些没有暴饮暴食障碍的人相比,这些人在晚上的初始饥饿激素水平更高,早上的初始饥饿激素水平更低。

压力测试后发现,早上和晚上所有参与者的压力水平都在上升,饥饿水平也在缓慢上升,但晚上总的来说,饥饿激素水平更高,这表明压力对饥饿激素的影响在晚上比白天更大。
