CELL:个性化食谱,减肥和控制血糖棒棒哒!

以色列魏茨曼科学研究所的研究人员已经证实,即使每个人都吃相同的食物,由于个人代谢不同,食物效果也不会相同。

 
血糖与糖尿病和肥胖等密切相关,因此,研究人员考虑使用使用连续血糖监测进行实验。他们使用标准的血糖指数(GI)将任何影响机体血糖的食物进行排序,进而探索研发健康饮食。 

以色列魏茨曼科学研究所计算机科学和应用数学系的Eran Segal和免疫系的Eran Elinav联合开展这项实验。研究人员持续监测800多人的血糖水平,时长一个多星期。研究人员发现,任何一定数值的GI食物到机体内并不是绝对的数值,它因人而异。 

参与者每天早上使用标准化早餐,这些都将记录下来;此外,参与人员还要在收集APP上记录下每天摄入的食物及含量。并且研究人员通过分发问卷,收集参与者的三围、血样结果、血糖监测结果和大便标本等。

不出所料,研究人员发现,参与者的年龄和BMI与餐后血糖有关。数据还显示,不同的参与者哪怕摄入相同的食物,也会出现不同的机体反应。 

一位肥胖且处于糖尿病前期的中年妇女,尝试食用各种饮食,却总是无法成功减肥和控制机体血糖,后来她得知可能是她的饮食方式不健康所致。例如,她吃西红柿后血糖水平急剧上升,但是她仍然不加控制,并多次食用西红柿。因此,营养专家在为她定制食谱时,便要考虑将西红柿排除在外。

Segal指出,大多数饮食建议是基于标准化评分系统,但是具体要因人而异。因此,需要定制个性化的食谱。为了探索人们之间的这种差异,研究人员对参与者的粪便样本中的微生物进行了分析。

越来越多的证据表明,肠道细菌会增加民众出现肥胖、糖耐量受损和糖尿病等的风险增加;本研究证实,特定的微生物种类和数量会影响民众餐后血糖增加程度。 

通过为26名参与人员定制个性化的膳食食谱,结果表明,参与人员的餐后血糖水平可明显降低,肠道微生物群种类发生改变。但是因为是个性化饮食,因此不同参与者餐后血糖降低的水平是有差别的,但是肠道微生物群的改变程度大体是一致的。

研究的局限之处在于需要严格要求参与者按照特定食谱就餐,同时准确地用手机APP记录下自己的食物种类和数量。 

Elinav认为,我们需要采用一种新的看法和态度对待肥胖和糖尿病。人们需要管住自己的口的同时,并合理定制属于自己的食谱,这样有助于避免肥胖和糖尿病。
