目标:
尽管在白种人群中研究报道,摄入水果和蔬菜(F&V)对骨质是有好处的,但是这个研究在亚洲人群中尤其是老年人中却缺乏数据而不能定论。因此我们在中国老年人群中探究水果和蔬菜摄入量与老年人骨质状态,并且探究潜在的作用机理。


设计、环节、参与人员:
该实验采用普查及横断面研究,参与人员是香港4000位年龄为大于65岁(含65岁)的老人。

方式:
我们根据大家日常的F&V习惯摄入量设计了一个有效的食物频率调查问卷,对参与人员的整个身体包括髋关节,腰椎,股骨颈等部位用双能X线骨密度仪进行了骨密度的测量。并通过标准化的问卷调查得到参与人员的人口统计信息、健康状态和生活方式等的信息。通过问卷调查和回归分析以获得F&V摄入量与不同部位的骨质量的关系。

结果:
全身及股骨颈骨密度和骨质含量与男性和女性的水果摄入量显著且密切相关,即使对潜在的混杂因素进行了一系列的调整之后结果依然如此。每天增加100克/千卡 水果的摄入量,男性和女性全身骨矿物质密度(BMD)分别增加4.5%和6.4%,股骨颈BMD分别增加3.9%和4.8%。没有发现蔬菜摄入量和骨质存在相关关系。对摄入维生素C含量进行调整,但是不改变饮食的酸度,水果摄入量对骨质密度提高的程度减轻。

结论:
对中国老年人士而言,水果摄入量更多,就意味着身体骨质程度越好,这一联系极有可能是由于饮食中维生素C含量调整所致。
